Are there any differences in the aprons for each of the three degrees?

The standard Masonic apron is white, preferably made from Lambskin, or white leather. You can see various types of masonic aprons at

Different officers in the lodge wear different aprons, with the badge of office, on the apron.

The apron is worn differently, depending on the degree level of the wearer.

On that web site (and others that sell aprons) some of the Master Mason aprons are shown with blue edging and symbols.  Is there any significance to that? Is this just an “optional” MM apron you can choose instead of plain white?

Nice apron.  It depends on jurisdicitons.  In MA a member attending a meeting of his lodge would wear an apron with a blue border signifying that he is a voting member of that particular lodge.  A visitor would wear an all white apron.  I am originally from TX and became a Mason there.  All Masons wear white even if visiting.

Different rules apply with respect to aprons, depending on the jurisdiction of the lodge.  Some lodges have aprons reserved for visitors, that have “VISITOR” displayed on the apron. Grand Lodge officers usually have the name of the office displayed on the apron.  Once a man has served a term as a Grand Officer, he often will have “PAST DISTRICT DEPUTY GRAND MASTER” , etc. on the apron. In France, individual member’s aprons are often decorated with silk flowers, satin sun-burst designs, and other colorful decorations.
